Saucy mid-week chicken curry

Easy chicken curry recipe
NOTE: So quick and easy there is no excuse for going without your mid-week curry fix now


    2 chicken breasts cut into large chunks
    2/3 cup lemon juice
    1/2 tsp caster sugar
    1 tbs white wine vinegar
    Splash of white wine
    2 tsp curry powder
    2 tsp ground coriander
    1tsp ground ginger
    1 tsp ground turmeric
    1 onion finely chopped
    2 cloves garlic finely chopped
    2tsp mexican tinga paste
    1 red chilli chopped
    2 tbs honey
    200ml double cream
    Chopped fresh coriander to garnish


    1. Combine all the ingredients, except the honey, in a large frying pan or wok and and marinade the chicken in the mixture for around half an hour.
    2. Turn on the heat and simmer the curry for 25 minutes stirring occasionally.
    3. Add the honey and continue cooking for another 10 mins to ensure the chicken is thoroughly cooked.
    4. Garnish with fresh coriander leaves and serve with Basmati rice. Soooooo easy and so tasty.
