Saucy mid-week chicken curry
NOTE: So quick and easy there is no excuse for going without your mid-week curry fix now
Ingredients

2 chicken breasts cut into large chunks
2/3 cup lemon juice
1/2 tsp caster sugar
1 tbs white wine vinegar
Splash of white wine
2 tsp curry powder
2 tsp ground coriander
1tsp ground ginger
1 tsp ground turmeric
1 onion finely chopped
2 cloves garlic finely chopped
2tsp mexican tinga paste
1 red chilli chopped
2 tbs honey
200ml double cream
Chopped fresh coriander to garnish
Method
- Combine all the ingredients, except the honey, in a large frying pan or wok and and marinade the chicken in the mixture for around half an hour.
- Turn on the heat and simmer the curry for 25 minutes stirring occasionally.
- Add the honey and continue cooking for another 10 mins to ensure the chicken is thoroughly cooked.
- Garnish with fresh coriander leaves and serve with Basmati rice. Soooooo easy and so tasty.
