American style blueberry pancakes
NOTE: This is a basic batter mix with baking powder to help them rise for a more fluffy texture. Use honey, maple syrup or golden syrup to sweeten.


    To make 24 pancakes 200g self-raising flour
    1 tsp baking powder
    Pinch of salt
    1 egg
    300ml milk
    1 tbsp melted butter
    Honey, maple syrup or golden syrup to taste


    1. Sift the dry ingredients into a bowl and mix thoroughly
    2. Beat the egg and milk together in another bowl and whisk gradually with the dry ingredients until you achieve a smooth batter. Add the melted butter and a good handful of blueberries
    3. Heat some butter and oil in a pan. When hot carefully add about 1 tablespoon of batter for each pancake, making sure you get some fruit in each spoonful. You will need to cook in batches unless you have a very large hotplate
    4. The pancakes will rise when cooking. After 2-3 mins, when golden, turn and cook the other side. Remove from pan and keep warm on a covered plate until you have enough cooked
    5. Serve immediately with your choice of sticky sweetener and some more blueberries
